Bake in oven rather than fry in pan

Recipe Ingredients for Veggie & Black Bean Tortilla Stack

1 1/2 cups tomatoes, diced
1/2 cup corn
1/2 cup onions, diced
1/2 cup red peppers, diced
1/2 cup zucchini, diced
1/3 cup carrots, grated
1 jalapeno pepper, seeded and minced
1 clove garlic, minced
1 tsp ground cumin
3/4 tsp chili powder
1 cup black beans, drained and rinsed
1/4 cup cilantro, diced
1 tbsp lime juice
4 flour tortillas medium
1 cup cheddar cheese, shredded

Recipe Directions for Veggie & Black Bean Tortilla Stack

  1. Saute all the veggies and spices together. Cook for 5 mins or so until some liquid has evaporated.

  2. Add in black beans and cook for another 2 mins.

  3. Remove from heat and stir in cilantro & lime juice.

  4. Divide mixture among the 4 tortillas, spreading on only half of tortilla. Top the bean mixture on each tortilla with a quarter of the cheese. Fold in half.

  5. Place on baking sheet and bake for 15 mins or so until a bit brown and cheese has melted.
