Veggie soup with black beans and rotel tomatoes

Recipe Ingredients for Veggie and Black Bean Soup

4 cup Soup, stock, chicken, home-prepared
2 cup, diced Celery
1 large Onions
2 carrot (7-1/2")(72 g) Carrots
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 cup Organic Black Beans
1 cup Corn, Sweet, Yellow
3 clove Garlic
1 1tsp Olive Oil

Recipe Directions for Veggie and Black Bean Soup

  1. sautee veggies and garlic in olive oil

  2. add chicken stock and heat until hot

  3. add one can of black beans, corn and Ro*tel tomatoes

  4. simmer on low for about an hour

  5. enjoy with crackers or tortilla chips
