Veggie, Black Bean, Baked Tofu and Cheese Omelet with Salsa and Sour Cream

Recipe Ingredients for Veggie, Black Bean, Baked Tofu and Cheese Omelete with Salsa and Sour Cream

2 large Egg, White
1 large Egg, Whole
1 fl oz Original Almond Breeze Unsweetened
0.25 cup Black Beans
0.5 serving Wild Wood Organics Savory Baked Tofu
0.5 oz Mexican Style Four Cheese
0.5 cup, chopped Peppers, Sweet, Red
0.5 cup, chopped Peppers, Sweet, Green
4 oz Orange Hothouse Bell Pepper
0.1 medium raw Onion Red
0.1 cup, pieces or slices Mushrooms
1 clove Garlic
2 tsp Taco Seasoning Blend
1 tbsp Cream, Sour, Cultured
1 serving Salsa

Recipe Directions for Veggie, Black Bean, Baked Tofu and Cheese Omelete with Salsa and Sour Cream

  1. Chop all veggies

  2. Saute on medium heat

  3. Add black beans and chopped tofu and seasoning once veggies are cooked

  4. Add garlic once everything is cooked/warmed.

  5. Cook until you smell the garlic (about 30 seconds), remove from heat.

  6. Beat egg, egg whites and almond milk.

  7. Grease pan and pour in egg mixture.

  8. Let cook until hard

  9. Pour bean/veggie/tofu mixture and cheese in on side of the egg

  10. Flip one side of the egg over onto the mixture

  11. Cook until done.

  12. Enjoy with Salsa and Sour Cream.

  13. You can add guacamole if you want but that adds more fat and calories.
