Easy and tasteful way to clear out your vegetable drawer and to have a great, satisfying meal with 0 guilt. This balance works well and serves just as a guideline for possible combination and proportions-- not too much or too little of anything except should use more peanut (2x the amount) and 1 whole pepper (~150g) or more if you have it there in your bin. Snow peas and a protein would be lovely in this dish as well. Does well on its own, but could likewise be served with rice or noodles.

Recipe Ingredients for Veggie-Bin Stir-Fry

135 grams Onions
53 grams Green Bell Pepper
130 grams Cabbage
212 grams Carrots, Baby
21 grams Ginger Root
100 grams Broccoli
21 grams Peanuts, All Types, Dry-roasted
1/2 tbsp Minced Garlic
3 tbsp Soy Sauce
1 1/2 tbsp Oil, Sesame

Recipe Directions for Veggie-Bin Stir-Fry

  1. Heat the oil to a high temp, add onion and saute a minute, lightly salting the onion.

  2. Add in garlic (fresh, if you have it) and ginger.

  3. Add remaining ingredients in following order, cooking 30-60 seconds between additions: bell pepper, carrots, broccoli, cabbage.

  4. Cook to taste, allowing veggies to cook through or remain crisp. Remember the veggies will continue to steam themselves for a minute or two after removed from heat, so err on the al dente side, especially if the cabbage looks near ready.

  5. Splash the mixture with soy sauce mid-way through, and, after the cabbage is in and has released some moisture, red pepper flakes to taste.
