Easy, healthy chili with leftover veggies and a bit of lean beef.

Recipe Ingredients for Veggie Beef Chili

14 1/2 ounces stewed tomatoes
15 ounces chili beans
15 ounces black beans
3/4 lb lean ground beef
1 cup celery, diced
1 1/2 onions, diced
3 cloves garlic, minced
3 tbsp chili powder
1 tsp cumin
4 tomatoes, chopped
1 zucchini, chopped
2 carrots, chopped
1/2 tsp olive oil

Recipe Directions for Veggie Beef Chili

  1. Saute onions, celery in oil.

  2. Add beef and brown. Season with chili and cumin powders.

  3. Simmer 10 minutes, then add carrots and beans.

  4. Add zucchini and simmer for 45 minutes.
