Recipe Ingredients for Veggie and Bean Salad

15 ounce soy beans
15 ounce corn
1 green pepper, chopped
1 red pepper, chopped
1 yellow pepper, chopped
1/2 red onion
1/4 cup canola oil
1/4 cup vinegar

Recipe Directions for Veggie and Bean Salad

  1. Finely chop all desired vegetables. Drain and rinse beans and corn (starches). Mix vegetables and starches in large bowl. Whisk oil and vinegar, add desired sweetener like splenda to taste. Pour over veggie mix. Add few pinches of salt to taste.

  2. Can use any veggies like celery, cucumbers, etc. Can add lime juice and cilantro.
