Recipe Ingredients for Veggie Bean Patties

1/2 cup rolled oats
200 ml water
1 carrot
1/2 onion
1/4 cup red pepper
1/4 cup celery
3 teaspoons corn oil
1/4 cup bulgur
200 ml water
3/4 cup kidney beans
1 clove garlic
1 tablespoon wheat germ
3 tablespoons bread crumbs
1/4 teaspoon basil
1/4 teaspoon thyme
1/4 teaspoon salt

Recipe Directions for Veggie Bean Patties

  1. Mix oats and 200 ml water in bowl and cook in microwave for 4 minutes at 60% power, set aside.

  2. Grate onion and carrot straining off any excess liquid.

  3. Finely chop red pepper and celery.

  4. Heat 1 teaspoon oil in skillet and add the carrot, onion, celery, sauteing briefly.

  5. Add the bulgur, basil, thyme and salt, continuing to saute.

  6. After about 5 minutes, stir in the 2nd 200 ml of water.

  7. Bring to boil, cover and reduce heat.

  8. Simmer until liquid evaporates.

  9. Meanwhile rinse and drain kidney beans.

  10. Mash in a bowl and combine with the oatmeal.

  11. Crush the garlic and stir into the bean-oat mixture.

  12. Stir in cooked bulgur and veggies.

  13. Add wheat germ and and bread crumbs as needed.

  14. Chill for at least 2 hours.

  15. Form into balls and gently flatten into patties, placing between waxed paper.

  16. Place in freezer for as long as possible.

  17. Heat remaining two teaspoons of corn oil in skillet.

  18. Add patties and cook over medium heat.

  19. Gently flip and brown on the other side.

  20. Cool slightly and eat either on a bun or a plate!
