Recipe Ingredients for Veggie and bean chili

2 medium White Onion
2 cup, chopped Carrots
2 medium Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Peppers, Sweet, Green
1 cup, diced Celery
1 cup, pieces or slices Mushrooms
3 tbsp Olive Oil
8 clove Garlic
48 oz Tomatoes Diced No Salt Added
2 cup Sauce, Pasta, Spaghetti/marinara, Ready-to-serve
35 grams Old El Paso Seasoning Mix Taco Less Sodium
1 cup Beans, Baked

Recipe Directions for Veggie and bean chili

  1. heat oil in large dutch oven

  2. add onions and crushed garlic

  3. saute until soft, not brown

  4. add carrots, green peppers and celery

  5. saute for a few more minutes - if it is too dry and starting to brown, add a bit of the juice from the canned tomatoes or water

  6. add zucchini and chopped mushrooms, saute until juices start to release

  7. Stir in pouch taco seasoning (chili seasoning is also great - if you can find low sodium). Stir to coat

  8. Add tomatoes and tomato sauce, stir to coat.

  9. Reduce heat and simmer for a couple hours

  10. Rinse kidney beans under cold water, add to pot,

  11. Add canned baked beans in tomato sauce (not pork and beans)

  12. Heat through. You can add cayenne pepper, chili flakes or any other seasonings you enjoy.
