2 tbsp light butter with canola oil
2 tbsp flour
1 cup skim milk
3/4 cup cheddar cheese, shredded
4 tbsp salsa
1/4 cup black beans
1/2 cup chick peas
1 cup broccoli, steamed
1/4 cup bell pepper, chopped

Recipe Directions for Veggie/Bean/Cheese Sauce for nachos

  1. Over medium heat, melt butter then wisk together flour and butter until thickened

  2. stir in milk, stirring constantly over medium heat until thick. stir in remaining ingredients, heat through. Serve over rice or with tortilla chips.
