A warm and hearty veggie bake that defies it's nutritional value. You would swear it was stuffed with cream and butter, when the only thing binding these healthy veggies together is a little bit of reduced fat milk. Go gently with the crispy onions.

Recipe Ingredients for Veggie Bake

1 cup, mashed Squash, Winter, Butternut
0.6 cup Spinach
0.75 cup slices Parsnips
0.33 cup Onions
1 tsp Herb Blend
1 cup Garden Vegetable Medley
0.25 medium White Onion

Recipe Directions for Veggie Bake

  1. peed and dice parsnip

  2. Dice onion

  3. boil onion, dill and parsnip in the milk

  4. Add the squash and spinach and stir to combine over low heat.

  5. Add the veggie medley and mix thoroughly. Place in 2 single serving oven safe dishes and top with crispy onions. Bake at 400 until golden and bubbly.
