This is a dish that every gardener will love. It can be made with any vegetable that you can think of. Use any kind of squash, potato, or bean. I have used parsnips, eggplant, zucchini, and edamine as well as the items listed below. Use your imagination and enjoy.

Recipe Ingredients for Veggie Bake

1 pound chicken breast
1/3 cup quinoa
6 carrots
5 ounces mushrooms
1 squash
1 bunch broccoli
1/2 head cauliflower
5 ounces spinach
1/4 head cabbage
15 oz can black beans
3/4 cup dressing, fat free sun dried tomato
1 sweet potato

Recipe Directions for Veggie Bake

  1. Soak quinoa in water for 2 hours and rinse. Add to a very large bowl.

  2. In the bottom of 2 sprayed 9 x 13 pans layer the spinach.

  3. Cut the remaining veggies to desired size and shape. I like to cut the soft veggies in large cubes and the hard veggies in to smaller cubes. Helps everything cook more evenly.

  4. Pour on dressing and mix well. Pour over spinach and bake in a 350 degree oven for 1-1.5 hours.

  5. Enjoy!
