Potatoes layered with zucchini, mushrooms and red pepper.

Recipe Ingredients for Veggie Bake

1 large red potato
1 zucchini
2 eggs
1/4 cup red pepper
1 cup mushrooms
1/2 cup vegetable broth
2 ounces goat cheese
2 cloves garlic

Recipe Directions for Veggie Bake

  1. Slice potatoes thinly (1/8 inch)

  2. Slice zucchini thinly (0.5 inch)

  3. Chop up mushrooms, red pepper, and garlic and mix.

  4. Layer veggies

  5. Pour vegetable broth over

  6. Bake at 400F for 45 min covered

  7. Remove cover. Add egg, and top with cheese.

  8. Bake 15min uncovered
