Delicious way to use up extra eggs and veggies

Recipe Ingredients for Veggie Bacon Fritata

6 large eggs
1 small tomato, diced
4 oz. bacon, crumbled
1/2 large green pepper, diced
1/4 large red pepper, diced
1/2 medium onion, diced
1 1/2 cups potato, shredded
1/2 cup cheddar cheese, shredded

Recipe Directions for Veggie Bacon Fritata

  1. Grease oven safe casserole

  2. Dice, Chop and crumble all ingredients.

  3. Place shredded potato in bottom of pan

  4. Add diced veggies

  5. Add crumbled bacon

  6. Mix eggs, milk & water and pour over top

  7. BAke at 325 for 20-25 minutes

  8. sprinkle cheddar on top and bake another 5 minutes.

  9. serve hot with toast.
