Recipe Ingredients for Vegeterian Chili

1 large onion, chopped
2 garlic cloves, minced
2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
4 stalks celery, chopped
1/2 cup ketchup
1 teaspoon chili powder
28 oz. kidney beans
2 cups water
2 carrots, chopped finely
1 medium bell pepper, chopped
1 medium zucchini, chopped

Recipe Directions for Vegeterian Chili

  1. Sauted all vegetables in cooking spray in a nonstick skillet until crisp-tender.

  2. In a stockpot combine veggies and remaining ingredients. Bring to a boil. Reduce heat to a simmer. Simmer for 10 to 20 minutes or until thoroughly heated and carrots and other tough vegetables are thoroughly softened.
