Healthy, delicious veg soup with Quinoa

Recipe Ingredients for Vegetbale soup

367 g courgette
168 g carrots
85 g celery
202 g green pepper
50 g leek
234 g tomatoes
400 g vegetable stock
2 tsp olive oil
50 g lentils
141 g Quinoa

Recipe Directions for Vegetbale soup

  1. Chop all veg and cook in olive oil until softened but not brown.

  2. Cook Quinoa as directed (boil for 10 minutes)

  3. Add stock and quinoa to veggies and cook for 10 minutes until vegetables are cooked but still retain some 'bite'.
