Yummy zucchini with tomatoes and cheese

Recipe Ingredients for Vegetarian Zucchinni casserole

2 zucchini, large sliced with skins
2 tomatoes, large diced
1/2 onion, diced
1/2 green pepper
1/4 cup breadcrumbs
1 tbsp. ground flax seed, simmered in 3 Tbsp. water (for a vegetarian egg substitute)
2 cups sargento reduced fat mozzarella shredded cheese

Recipe Directions for Vegetarian Zucchinni casserole

slice veggies mix together in big bowl with 1/2 tsp garlic powder (or dice a couple of cloves of garlic), 1/4 tsp salt, 1/2 tsp ground mustard, 1 tsp basil, 1 tsp oregano, 1/4 tsp paprika, add beaten egg or egg substitute, add bread crumbs and half the cheese. After tossing transfer to a 9 x 9 pan sprayed with Pam Olive Oil, top with some paprika and the remaining cheese, bake at 350 for aprx 45 minutes or until cheese is brown and the zucchini is to the desired texture (doneness) you like.
