Recipe Ingredients for vegetarian zucchini mushroom casserole

1 1/2 T vegetable oil
4 zucchinis, sliced
1 small onion, chopped
3 cloves garlic, grated
5 oz Textured vegetable protein
1 cup mushrooms, quartered
1/4 cup dry white wine
200 ml tomato sauce
1/3 cup swiss cheese, shredded
1/2 cup water

Recipe Directions for vegetarian zucchini mushroom casserole

  1. preheat oven to 375 F

  2. Fry up onions in pan

  3. Add TVP

  4. add garlic and wine, let simmer for few minutes

  5. add tomato sauce and water, simmer for 5 - 8 minutes until tvp has hydrated

  6. season as desired

  7. add zucchini and mushrooms into casserole

  8. pour tomato/tvp sauce over veggetables

  9. top with cheese

  10. Bake for 30 - 35 min till zucchini is done
