Vegetarian Zucchini Boats Recipe

Small Serving size zucchini boats. Stuffing works well in portobella mushrooms also.

Recipe Ingredients for Vegetarian Zucchini Boats

1 zucchini, halved crosswise (will halve lengthwise later)
2 T olive oil
1/4 c diced onions
1/2 tsp garlic
5 baby carrots, minced
7 oz diced tomatoes
3 mushrooms, minced
1 tsp oregano
2 T fresh basil
1 1/2 T breadcrumbs
2 T parmesan cheese

Recipe Directions for Vegetarian Zucchini Boats

  1. Bring water to boil in a saucepan. Once boiling, add zucchini and let boil until skin is easily pierced with a fork. Remove from water immediately and set aside to cool.

  2. Preheat oven to 350 degrees.

  3. Heat oil in skillet (or emptied saucepan). Add onions and garlic. Sautee on medium for about a minute and add the carrots. Sautee for 2 more minutes, careful not to burn the garlic.

  4. Add tomatoes, mashing up the tomato chunks. Add mushrooms and spices, saving some basil to top the boats.

  5. Slice zucchini lengthwise and spoon out insides, careful to leave the ends on so that the stuffing stays in. Add the scooped out parts to the stuffing mixture.

  6. Add parmesan cheese and stir.

  7. Sprinkle with breadcrumbs until most of the moisture is absorbed and mixture thickens up. Spoon into zucchini, topping with fresh basil and a little more parmesan.

  8. Bake for 15 minutes at 350 degrees.
