Recipe Ingredients for Vegetarian Yemenite Soup

3 tbsp Olive Oil
2 medium (2-1/2" dia) Onions
3 medium Carrots
3 stalk, medium (7-1/2" - 8" long) Celery
6 clove Garlic
0.5 tsp Cumin
0.25 tsp Cumin Seed
0.125 tsp, ground Cardamom
0.125 tsp Coriander Seed
0.125 tsp Cloves, Ground
8 cup (8 fl oz) Water
1 tsp Salt, Table
0.5 tsp Pepper, Black
1.5 cup, cubes Squash, Winter, Butternut
1 Can Chick Peas
0.25 cup Parsley
28 oz Diced Tomatoes
1 tsp Turmeric, Ground
1 serving, raw Cilantro

Recipe Directions for Vegetarian Yemenite Soup

  1. In a large soup pot, heat the oil and cook the onions, carrots and celery over medium heat for 8 min or until they soften. Stir in the garlic and cook 1 min.

  2. Stin in the ground cumin, sumin seeds, cardamom, coriander, and cloves. Add the water, salt, and pepper. Bring to a boil. Cook for about 10 min.

  3. Add the squash, chickpeas, parsley and tomatoes. Return the liquid to a boil, lower the heat, cover, and simmer for 1 hour or until chickpeas are tender and flavours are melded.

  4. Stir in the turmeric. Ladle into bowls and serve with chopped cilantro.
