A great hearty bean soup loaded with colorful veggies. Perfect with corn muffins and a green salad.

Recipe Ingredients for Vegetarian White Bean Soup

16 oz dry Great Northern beans
4 cups low sodium vegetable broth
1 large yellow onion, chopped
4 cloves garlic, crushed
4 stalks celery, chopped
4 carrots, chopped
1 tbsp thyme
30 oz diced tomatoes
8 oz sliced black olives
1/2 tsp salt
1 tsp black pepper

Recipe Directions for Vegetarian White Bean Soup

  1. Rinse and pick over dry beans, removing any rocks or shriveled beans.

  2. Place the beans in a large bowl with enough water to cover and soak overnight or at least 8 hours.

  3. Drain the beans, and put them in a slow cooker with the onion, garlic, celery, carrots and thyme.

  4. Pour the broth over the beans and vegetables. Add enough water to fully cover the beans.

  5. Cook on low for 8-10 hours or high for 4-5 hours.

  6. Stir in the tomatoes, olives, salt and pepper.

  7. Cook on high for a few minutes until the tomatoes and olives have a chance to heat through.
