Vegetarian version of Walnut-Avocado Risotto

Recipe Ingredients for Vegetarian Walnut-Avocado Risotto

4 cups vegetable broth
1/3 cup walnuts, finely chopped
2 small onions, diced
2 cloves garlic, diced
1/8 cup cilantro, finely chopped
3/4 cup white wine, dry
3/4 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg
2 tablespoons Olive Oil
12 oz. arborio rice
2 avocados, mashed
1/4 cup fresh lime juice

Recipe Directions for Vegetarian Walnut-Avocado Risotto

Put broth (whether it be chicken or vegetable) in a pot on high heat and bring to a boil, then bring heat down to a simmer. In a large sauce pan, heat olive oil. Once heated add rice and saute until all rice is nicely coated in oil. Then add onions, walnuts, and garlic and continue sauteing until onions are tender, stir constantly - making sure to keep rice from sticking to the pan. Add wine and continue stirring until absorbed. Then add broth cup by cup until fully absorbed into rice. As the last cup of broth is being absorbed into rice, mash both avocados in a small bowl with the juice of one lime and 1/2 tsp of salt. After last cup of broth is fully absorbed by rice and al dente, fold in the avocado mixture. Serve as an entree or as a side.
