Recipe Ingredients for Vegetarian Vegetable Pie

1 oz dried mushrooms (shitake or mixed wild)
1 cup water, boiling
2 tsp olive oil
2 cups onion, chopped
2 cups celery, chopped
2 cloves garlic
2 cups potatoes, cubed
2 cups carrots, sliced
1 cup peas (fresh or frozen)
1 tsp dried thyme (can use fresh)
1 tsp dried rosemary (can use fresh)
1 cup vegetable broth (room temperature)
1 tbsp flour
2 tbsp tomato paste
1/2 cup whole wheat flour
1/2 cup all purpose flour (unbleached)
2 tsp baking powder (heaping)
1/2 tsp salt
3/8 cup nonfat milk (or soy milk)
1/8 cup canola oil

Recipe Directions for Vegetarian Vegetable Pie

  1. For the filling: Soak the dried mushrooms in the boiling water for 20-30 minutes. Drain, reserving the liquid, and chop the mushrooms.

  2. Saute the onion, celery, and garlic in the oil in a large saute pan. Add the dried herbs and cook a little longer (if using fresh herbs, add them last, with the peas).

  3. Add the potatoes and carrots and continue cooking until the carrots are crisp-tender.

  4. Add the mushroom soaking liquid and let simmer for a couple of minutes.

  5. Dissolve 1 tbsp flour in the vegetable broth and whisk in the tomato paste. Slowly add this mixture to the simmering stew, stirring well. Continue cooking until the stew has thickened. Add salt and pepper to taste.

  6. Add more liquid (broth or water) to the stew as necessary create additional gravy and/or to thin out the gravy. The stew should be rich and thick but not too dry.

  7. Add the peas and cook just until the peas are tender.

  8. Pour the stew into a sprayed, 2-quart casserole dish (I like to use a large souffle dish).

  9. To prepare the topping: Mix the flours, baking powder and salt in a bowl. Add the milk and oil. Stir until the ingredients form a ball. Place rounded tablespoons full of dough around the top of the stew until the mixture is completely covered.

  10. Bake for 15 minutes at 375 degrees. Cool for 5 to 10 minutes before serving.
