Recipe Ingredients for Vegetarian Three Bean Chili

1 tsp Kosher Salt
32 oz Tomatoes Diced
1.5 oz Garlic
2 1tsp Olive Oil
10 oz Refried Beans, Canned
3 tsp Tabasco Sauce
14 oz Beans, Kidney, Red, Mature Seeds, Canned
1 pepper Peppers, Jalapeno
6 oz Yellow Onion
6 oz Peppers, Sweet, Green
3 tsp Vegetable Base
6 oz Peppers, Sweet, Red
3 tsp Cumin
6 tsp Quality Spices Chili Powder
3 cup (8 fl oz) Water

Recipe Directions for Vegetarian Three Bean Chili

  1. Over moderate heat, add oil to a deep pot - combine diced onions, peppers and garlic - saute 3 -5 minutes to soften the vegetables.

  2. Deglaze pan with vegetable stock - or use 1 cup of beer instead of stock.

  3. Add tomatoes, black beans, and kidney beans - stir well to combine.

  4. Season with cumin, chili powder, hot sauce and salt.

  5. Thicken chili by adding the refried beans.

  6. Simmer over low heat 30 - 45 minutes.

  7. Taste - adjust seasonings as necessary.

  8. Great served with shredded cheese, green onions, diced tomatoes, and tortilla chips!!!
