Hearty, healthy, tasty Thai Green Curry. Serve over rice noodle or steamed basmati/jasmine rice. Large serving

Recipe Ingredients for Vegetarian Thai Green Curry

250 g light coconut milk
45 g green curry paste
15 g fish sauce
3 g splenda
256 g chopped carrots
140 g sliced mushrooms
176 g chopped broccoli
124 g sliced zucchini
160 g sliced onion

Recipe Directions for Vegetarian Thai Green Curry

  1. heat stir fry pan and spray with cooking spray

  2. add green curry paste and fry for approx 1 minute until fragrant

  3. add coconut milk and bring to a good simmer (not boil) for about 5 minutes

  4. reduce heat to medium and add fish sauce and splenda

  5. add carrots and onions and simmer for 5 minutes

  6. add mushrooms, broccoli, and zucchini and simmer approx 3-5 minutes until vegetables are tender crisp

  7. sprinkle/garnish with Thai holy basil if available just prior to serving and serve over whole grain basmati rice
