Recipe Ingredients for vegetarian tagine

3 tomato
2 onions
4 scallions
1/3 cup olive oil
3 carrots
3 zucchini
1 tsp cumin
1/4 tsp cinnamon
1/8 tsp cloves
1 tbsp mint
2 cups chicken broth

Recipe Directions for vegetarian tagine

  1. Blanch tomatoes for 1 min. Peel and chop flesh.

  2. Saute onions and scallions in half oil. Add tomatoes, carrots, and zucchini. Saute 10 min.

  3. Add remaining oil, cumin, cinnamon, cloves, half mint. Pour in veg stock and season with SP. Simmer 20 min.
