Recipe Ingredients for Vegetarian Tacos

1/3 cup quinoa, cooked
2 oz V8 juice
1/2 cup water
1 tsp worcestershire sauce
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp chili powder
1/4 tsp cumin
1 dash cayenne pepper
1/2 cup romaine lettuce, shredded
1/4 cup cheddar cheese, shredded
1/4 cup tomatoes, diced
3 tbsp sour cream, low-fat
3 taco shells

Recipe Directions for Vegetarian Tacos

  1. Heat olive oil in pan. Add cooked quinoa and stir. Add taco seasoning and worcestershire sauce. Add water and V8 juice and cook until the desired consistency.

  2. Chop lettuce and tomato. Fill taco shells with quinoa, shredded cheese, lettuce, tomatoes and top with sour cream.
