Recipe Ingredients for Vegetarian Tacos

16 ounces refried beans
1 onion, chopped
1 ounce taco Seasoning
1 large zucchini, coarsely grated
18 taco shells
2 ounces sliced black olives, drained
2 medium tomatoes, chopped
2 cups shredded monterey jack cheese
2 cups chopped lettuce

Recipe Directions for Vegetarian Tacos

In medium saucepan, combine refried beans, onion, taco seasoning, and 1/2 of zucchini; mix well. Bring to a boil over medium-high heat; reduce heat to low and simmer, uncovered, 3 minutes. Fill each taco shell with 2 to 3 tablespoons mixture. Place filled shells on baking sheet. Bake in 350 F oven 5 minutes. Top with olives, tomatoes, lettuce, remaining zucchini, and cheese.
