veggies, beans, brown rice, avacado, sour cream and salsa wrapped into a fajita sized flour tortilla

Recipe Ingredients for vegetarian tacos

1 cup zucchini
1 cup yellow squash
1 cup red bell pepper
1/8 cup olive oil
1 tbsp garlic
2 tbsp oregano
1 tspn salt
1 1/2 tspn pepper
1/2 cup avacado
3/4 cup corn kernels
2 scallions
2 tbsp lime juice
2 roma tomatoes
1 cup light sour cream
1 cup black beans
1 cup brown rice
1 cup salsa

Recipe Directions for vegetarian tacos

  1. marinade zucchini, squash, red pepper with garlic, oregano, and olive oil for at least an hour

  2. boil brown rice as per package directions

  3. grill marinaded veggies with one ear of corn

  4. chop avacado and tomatoes and juice lime

  5. cut corn kernels off of ear of corn

  6. mix corn, avacado, lime, and tomato with salt and pepper to taste

  7. heat black beans through on stove

  8. fill each tortilla with grilled veggies, corn mixture, beans, rice, light sour cream, and salsa
