This recipe for vegetarian tacos is light and refreshing. Experiment with the types of vegetables you use depending on the season; Prep time: 30 minutes; Cook time: 10 minutes

Recipe Ingredients for Vegetarian Tacos with Cheese Filling

1 cup reduced fat ricotta cheese
4 ounces chiles, green mild diced
2 tbsp cilantro, roughly chopped
2 zucchini, grated
2 cups corn
1 tomato, finely chopped
5 taco shells, small

Recipe Directions for Vegetarian Tacos with Cheese Filling

  1. n a food processor, combine cheese, chiles and 1 Tbsp cilantro. Salt and pepper to taste. Set aside.

  2. In olive oil, saute zucchini until slightly browned. Add corn, and saute until corn is warmed, about 3-5 minutes. Take off the heat. Add 1 Tbsp cilantro and tomato. Salt and pepper to taste.

  3. Spoon vegetables into small warmed corn or flour tortillas. Top with a generous spoonful of cheese and garnishes such as avocado (or guacamole), fresh cilantro and salsa.
