Recipe Directions for vegetarian taco soup

  1. Chop vegetables.

  2. Add all ingredients to pot (do not drain cans).

  3. Bring to a boil, then reduce heat to allow to simmer. Stir occasionally.

  4. Allow to simmer for about a half hour.

  5. Serve with tortilla chips, sour cream, tortillas, lime, etc.

  6. *If the soup is a little too thick for your liking, you can add water to make it more soupy. This recipe yields a thick "chili".
