Recipe Ingredients for Vegetarian Taco Salad

1 tbsp canola oil
1 large onion, chopped
1 1/2 cup frozen corn kernels, thawed
2 large tomatoes
1 1/2 cups cooked rice
15 oz canned black beans, rinsed
1 1/2 tbsp chili powder
1 tsp dried oregano
1/4 tsp salt
1/3 cup salsa
2 cups shredded iceberg lettuce
1 cup shredded cheddar cheese
70 g Bite Size Rounds Tortilla Chips , crumbled coarsely
1 fruit+2"+dia lime

Recipe Directions for Vegetarian Taco Salad

  1. Fry onions, corn, and garlic if you want in a lge non-stick pan, using the canola oil. 5 min.

  2. Add the chopped tomato, rice, beans, spices and salt, continue cooking 5 min.

  3. Toss bean mix in a large bowl with the lettuce and salsa, stirring well.

  4. Serve with the cheese and crumbled chips as garnish, also good with extra salsa, avocado chunks, sour cream.
