Recipe Ingredients for Vegetarian Taco salad

1 teaspoon vegetable oil
1 cup frozen corn
1 tablespoon water
1 medium avocado
1 tablespoon lemon juice
1/2 cup tomato
2 tablespoons scallion
2 cups lettuce

Recipe Directions for Vegetarian Taco salad

  1. Combine oil, corn and water in small saucepan. cover and cook on medium heat for 3 minutes . Uncover adn cook for 1 to 2 minutes,

  2. Slice avocado lengthwise. Cut into cubes and mix with lemon juice. Add corn mixture, tomato and scallions.

  3. Spoon onto a bed of lettuce and crumble tortilla chips on top!
