Recipe Ingredients for Vegetarian Taco Salad

350 grams Quorn mince
3 Taco Shells
6 grams Taco Seasoning
1 cup Water
300 grams Lettuce, iceburg
100 grams Spinach
2 Tomatoes
1 Avocado
35 grams Onion, yellow
35 grams Onion, red
1 Pepper, Hot Chili, Red
50 grams Cucumber
2 cloves Garlic
2 tablespoons fat free yogurt
1 teaspoon Lemon Juice
1 teaspoon Red Wine Vinegar
1/4 teaspoon salt

Recipe Directions for Vegetarian Taco Salad

  1. Add Quorn mince to a large frying pan and lightly brown over a medium heat.

  2. Add taco seasoning and water to the pan and allow to simmer over a low heat.

  3. Roughly chop tomatoes, splitting 2/3 into one larger bowl and remaining 1/3 into second smaller bowl.

  4. Roughly chop yellow onion and cucumber and add to larger bowl.

  5. Roughly chop red onion and add to smaller bowl.

  6. Finely mince chili pepper and garlic gloves and split equally between both bowls.

  7. Cut avocado into two halves and scoop flesh into smaller bowl.

  8. Add red wine vinegar to larger bowl and mix gently to combine all ingredients, season with salt to taste.

  9. Add lemon juice to smaller bowl with a pinch of salt and mix avocado together with tomatoes, red onion, garlic and chili, using a fork to mash avocado flesh into smooth paste.

  10. Chop iceburg and rinse in cold water with rocket and spinach leaves.

  11. In a large salad bowl, combine rinsed leaves with contents of smaller bowl (guacamole) and larger bowl (salsa), then dress with yogurt.

  12. Drain off any excess water from cooked Quorn mince and add to salad bowl.

  13. Crumble taco shells over the top of the salad and serve.
