A very filling stuffed pepper recipe that you can substitute veggie stock for and have a completely vegetarian meal!

Recipe Ingredients for Vegetarian Stuffed Peppers

1/2 cup chopped onion
2 cloves garlic, minced
2 tsp olive oil
28 oz reduced-sodium chicken broth
1 1/2 cups brown rice
1/2 tsp dried oregano
1/2 tsp ground black pepper
1/4 tsp salt
1/8 tsp paprika
14 1/2 oz Fiesta Corn
8 small green peppers

Recipe Directions for Vegetarian Stuffed Peppers

  1. In a large saucepan, cook onion and garlic in hot oil over medium for 5 minutes. Stir in broth. Bring to a boil. Add uncooked rice, oregano, black pepper, salt, and paprika. Simmer, covered for about 40 minutes or until rice is tender. Remove from heat and stir in tomatoes and corn.

  2. Preheat oven to 400 degrees F. Slice tops from sweet peppers, removed seeds. Arrange peppers in a baking dish and then spoon rice mixture into each pepper. Place pepper tops on rice.

  3. Bake, covered for about 30 minutes or until peppers are crisp-tender and rice mixture is cooked through.
