This is a take on typical meat and rice stuffed peppers for the vegetarian.

Recipe Ingredients for Vegetarian Stuffed Peppers

1 cup Brown Rice
1.75 cup Black Beans Drained and Rinsed
4 medium raw Bell Pepper Green
4 tbsp chopped Onions
0.5 cup, chopped Carrots
1 large Egg, Whole
4 cup Tomato Juice
1 tsp Garlic Powder
0.5 tsp Spices Ground Black Pepper
1 tsp Salt, Table

Recipe Directions for Vegetarian Stuffed Peppers

Drain and rinse black beans then mash them with the rice. Add finely chopped onion and carrot. Cut the tops off of the peppers and chop the tops up. Add them to the mixture. Add egg, ground pepper, garlic powder and salt. Mix with hands and then stuff in the peppers. Place in a deep pot, pour over the tomato juice, cover with foil or lid and bake at 350 degrees for 2 hours. Enjoy!
