Green peppers stuffed with rice, lentils & cheese - great protein! Sub black beans for lentils to add protein punch.

Recipe Ingredients for Vegetarian stuffed peppers

1/2 cup brown basmati rice
1 cup green lentils
1 cup chopped onion
2 garlic cloves, minced
2 tbsp ground flaxseed
1/3 cup salsa
2 tomatoes, chopped
1 tsp ground cumin
2 green peppers, halved
1/2 cup light Cheddar cheese, shredded

Recipe Directions for Vegetarian stuffed peppers

  1. Cook rice and lentils accordingly.

  2. Fry onions and garlic, then add all ingredients.

  3. Stuff green peppers.

  4. Top with cheese.

  5. Broil until cheese melted.
