Green Pepper stuffed with vegetables, soya mince and a little kick of cayenne pepper

Recipe Ingredients for Vegetarian Stuffed Pepper

5 oz green bell pepper
1 oz
40 g carrot
40 g broccoli
40 g onion
1 tbsp tomato puree
1 clove garlic

Recipe Directions for Vegetarian Stuffed Pepper

  1. Microwave the pepper whole for 3 minutes, then remove from the microwave and take of the top and remove the seeds.

  2. Sweat the onions and garlic in a little cooking spray.

  3. Add the rest of the vegetables, finely chopped, as well as the vegetarian mince.

  4. Cook the vegetable mixture in the tomato puree and with a pinch of cayenne (optional) until they start to soften.

  5. Fill the pepper with the vegetable and soya mince stuffing, replace the top of the pepper and place on a baking sheet.

  6. Cook at 180C for about 25 minutes.
