A yummy combination of rice, egg, and cheese in a bell pepper shell.

Recipe Ingredients for Vegetarian Stuffed Pepper

1/2 bell pepper
1 wedge Laughing Cow Light French Onion
1/4 cup egg beaters
1 ounce Havarti
1/2 cup cooked brown rice

Recipe Directions for Vegetarian Stuffed Pepper

  1. Mix the Laughing Cow, rice, and egg beaters in a small bowl. Season as desired.

  2. Place the 1/2 bell pepper, seeded, in another bowl. Pour the rice mixture into the pepper shell.

  3. Microwave for 3-4 minutes. Add the Havarti on top during the last 30-45 seconds of cooking.

  4. Carefully remove from the microwave. It's hot!
