Incredible stuffed portabellas grilled to perfection. Meaty and suprisingly low cal. A serving of this equals two stuffed caps.

Recipe Ingredients for Vegetarian Stuffed Grilled Portabellas

16 oz portabella caps (4 large mushrooms)
1/8 cup TVP
1/8 tsp poultry seasoning
1/8 tsp paprika
1/8 tsp marjoram
1/8 tsp sage, ground
1/2 tsp worcestershire
1/4 medium onion
2 cloves garlic
1/2 medium whole tomato
1/4 tsp cayenne
1/2 tsp dried basil
1/2 tsp parsley
1/2 cup frozen cut leaf spinach
1 tbsp extra virgin olive oil
2 tbsp parmigiano reggiano cheese, grated

Recipe Directions for Vegetarian Stuffed Grilled Portabellas

  1. Rinase mushrooms and gently remove stems and scrape out gills with a spoon careful to not break or damage caps.

  2. Place TVP with 2 tbsp water, poultry seasoning, paprika, marjoram, sage, and worcestshire to rehydrate and flavor.

  3. Spray or lightly rub large pan with olive oil.

  4. Add finely chopped onions and garlic and cook on medium high until tender, stirring frequently.

  5. Finely chop tomato and add with cayenne, sweet basil, and parsley, stirring well.

  6. Add frozen spinach and stir until cooked through.

  7. Remoive from heat and add finely grated cheese. Stir.

  8. Rub the inside and outside of caps with olive oil.

  9. Grill with bottom (where the gills were) down for 5-7 minutes until well grilled.

  10. Flip over and fill the bottom of the cap with vegetable mixture.

  11. Grill top down (so mixture does not spill out) for 5-7 mins until everything is mixed well.

  12. Serve immediately.
