Since becoming a vegetarian, one of the few meat dishes I've missed is my Mom's Hungarian stuffed cabbage (Toltott Kaposzta). I've never found a protein substitute with the right consistency for the cabbage rolls. Instead, I took the ingredients and made a hearty stew. Morningstar Crumbles and liquid smoke replace the smoked ham of the original recipe. Drop the ingredients in the slow cooker and come home to a hot meal!

Recipe Ingredients for Vegetarian Stuffed Cabbage Stew for Slow Cooker

1 cup rice
4 cups Morningstar Meal Starters Grillers Recipe Crumbles
4 cups Morningstar Meal Starters Sausage Style Recipe Crumbles
300 g raw cabbage, coarsely chopped
20 oz sauerkraut, rinsed
1 tbsp raw garlic, diced
1 1/2 cups raw onion, grated
2 tsp liquid smoke
16 oz Low Sodium V8 100% Vegetable Juice
2 tsp Colgin Liuid Smoke

Recipe Directions for Vegetarian Stuffed Cabbage Stew for Slow Cooker

  1. Begin by spreading rice evenly on the bottom of a large slow cooker.

  2. Combine the sauerkraut, cabbage, onion, and garlic. Place this mixture over the rice.

  3. Knead the closed bags of Morningstar Meal Starters (beef and sausage) to break up large frozen clumps.

  4. Combine frozen beef and sausage Crumbles and place over the sauerkraut/cabbage layer.

  5. Add the liquid smoke to the V8 Juice, stir, and pour over the contents of the slow cooker.

  6. Cook at high temperature 4-6 hours or low temperature 8-12 hours.

  7. Stir thoroughly after cooking to mix the layers in the slow cooker.

  8. Add a dollop of sour cream and a sprinkle of paprika when serving.

  9. For a more authentic (but non-vegetarian) flavor, substitute 2 lbs ground smoked ham for the Morningstar Crumbles.
