Vegetarian Stuffed Cabbage Recipe

My husband is a vegetarian and I LOVE stuffed cabbage, and I am currently doing Weight Watchers. This recipe is VERY WW friendly at around 2pts per roll, and is completely vegetarian.

Recipe Ingredients for vegetarian stuffed cabbage

3/4 head of cabbage
6 onions
1 cup cooked lentils
1 cup cooked white rice
1 dash of salt
1 dash of crushed red pepper
1/2 cup of ketchup

Recipe Directions for vegetarian stuffed cabbage

  1. Start by steaming or boiling the cabbage, and carefully remove as many of the leaves whole as possible. Once you get down to the very light green leaves, they get harder to remove without tearing them.

  2. Cut the stem out of each leaf and set aside.

  3. For the filling:

  4. Start by slicing the onions thinly and cooking in a tbsp of olive oil, as they start to cook add a little water if necessary. Just as the onions are finished, add the ketchup, let mixture cook down until most of the liquid is gone. In a separate pan cook 1/2 cup of white or brown rice according to package directions. In another separate pan cook 1/2 cup of lentils in 3 cups of water or vegetable broth.

  5. Drain the lentils when they are broken open and tender.

  6. Mix together the rice, the lentils, and 3/4 of the onions.

  7. Line the bottom of your casserole dish with 1/4 cup of the tomato sauce, and 1/4 cup of the cooked onions.

  8. Lay out each cabbage leaf and fill with about 1/4 cup of the filling and roll up. Set in your tomato sauce lined casserole dish in two rows, you should get at least 12 rolls from this recipe.

  9. Pour over remaining tomato sauce and remaining onions, and bake in a 400 degree oven for 30 mins.

  10. You can also lay any extra cabbage leaves over the top before you pour over the tomato sauce and onions.
