A tasty soup without the ham, bacon or hambone and the accompanying salt.

Recipe Ingredients for Vegetarian Split Pea Soup

6 c water
1/2 c brown rice
2 c dried split peas
1 T olive oil
1/2 c celery , diced
1/2 c. carrots, diced
1 c yellow onion, diced
1 tsp salt
1 tsp basil

Recipe Directions for Vegetarian Split Pea Soup

  1. Bring water to a boil in large pan. Add rice, stirring once. Cover, lower heat and simmer for 30 minutes.

  2. Add the split peas and simmer another 30 minutes.

  3. Saute the celery, carrots and onions in olive oil, until onions are clear. Then add them to the split peas and rice. Simmer until vegetables are tender.

  4. Season with salt and basil.

  5. This soup will thicken so you may have to add more water. Is also very good served over cornbread, or you can cream it in a food processor.
