This is a delicious vegetarian split pea soup, originally found here: http://allrecipes.com/Recipe/Vegan-Split-Pea-Soup-I/Detail.aspx My mom has been telling me for years that split pea soup is pointless without meat for flavor, and I've finally proven her wrong. This soup is delicious and is now one of my favorites. Makes about 12 1 cup servings.

Recipe Ingredients for Vegetarian Split Pea Soup

1 tablespoon vegetable oil
1 onion
3 cloves garlic
2 cups dried split peas
1/2 cup barley
1 1/2 teaspoons salt
7 1/2 cups water or stock
3 carrots
3 stalks celery
3 potatoes
1/2 cup chopped parsley
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper

Recipe Directions for Vegetarian Split Pea Soup

  1. Saute oil, onion, and garlic

  2. Add water/stock (I used 3 cups homemade stock, a 14.5 ounce can of fat free vegetable stock, and a few cups of water, as needed), peas, carrots, celery, potatoes, parsley, basil, thyme and ground black pepper

  3. Cook the barley separately (I added a vegetable bullion cube to the water) and add to the soup after it's done cooking. Alternatively, you can cook it in the soup, but you'll have to add like 5 more cups of water and keep adjustsing spices, etc.
