Got this recipe from 101 Cookbooks. Garnish with smoked paprika and a drizzle of evo. Suggested variations add brocoli instead of spinach, use vegetable stock in place of water.

Recipe Ingredients for Vegetarian Split Pea Soup

2 T extra virgin olive oil
3 c chopped onion
1/2 tsp sea salt, fine grain
2 c dried split peas
5 c water
0.33 c lemon juice
1 c fresh spinach

Recipe Directions for Vegetarian Split Pea Soup

Add olive oil to a big pot over med-high heat. Stir in onions and salt and cook until the onions are softened, just a minute or two. Add the split peas and water. Bring to a boil, dial down the heat, and simmer for 20 minutes, or until the peas are cooked through (but just a touch al dente). Transfer half of the soup to a blender and puree. Pour the pureed mixture back to the "chunky" soup and stir until evenly distributed. If you need to thin the soup out, add more water or vegetable stock a little bit at a time. Stir in the lemon juice and taste. If the soup needs more salt, add more a bit at a time until the flavor really pops.
