Recipe Ingredients for Vegetarian Spicy Tortilla Soup

1 tsp. olive oil
1 c. onion, diced
1/2 c. green pepper, diced
1 tsp. minced garlic
1 jalapeno pepper, seeded & diced
4 vegetable bouillon cubes
4 c. boiling water
1/2 tsp. cumin
1 tsp. chili powder
1 c. chunky salsa
1 T. lemon juice
2 c. frozen corn
30 oz. canned black beans, drained & rinsed
15 oz. can diced tomatoes, southwest style

Recipe Directions for Vegetarian Spicy Tortilla Soup

  1. Saute onion, garlic, jalapeno, and green pepper in olive oil for 6 minutes.

  2. Meanwhile, in large soup pot, bring water to boil and stir in bouillon cubes until dissolved.

  3. Add onion mixture and remaining ingredients. Simmer until heated through.

  4. Serve with sour cream, shredded cheese, and tortilla chips.

  5. 1 serving= 1 cup
