Italian influenced layered spaghetti squash dish with cottage cheese, spinach, tomato sauce and seasoning.

Recipe Ingredients for Vegetarian Spaghetti Squash Lasagna

1 lb. spaghetti squash
9 oz. spaghetti squash
8 oz. tomato sauce
1 tbsp. minced garlic
1 tsp. minced garlic
2 cups 2% cottage cheese
1 1/2 tbsp. basil
1 tsp. black pepper
4 cups chopped spinach
1 tbsp. fat free cream cheese
1 tbsp. grated parmesan cheese
1/8 cup shredded parmesan
1 cup spinach leaves

Recipe Directions for Vegetarian Spaghetti Squash Lasagna

  1. Bake spaghetti squash.

  2. In medium bowl, mix tomato sauce, 1 tbsp. garlic, 1 1/2 tsp. seasoning and 1/2 tsp. black pepper.

  3. In separate bowl, combine cottage cheese, cream cheese, chopped spinach, remaining black pepper & seasoning.

  4. In casserole dish, layer spaghetti squash with ingredients in the order of your choosing.

  5. Sprinkle top with shredded parmesan.

  6. Bake at 400 for 40 minutes, or until cheese on top is golden.
