This is a great, veggie-rich spaghetti sauce. It works served over any kind of pasta, but preferably one that is whole-wheat or non-white.

Recipe Ingredients for Vegetarian Spaghetti Sauce

1 tbsp. olive oil
3 medium onions, chopped
1 small green pepper, chopped
8 medium tomatoes, peeled, seeded and chopped
1 jalapeno pepper, seeded and chopped
1 tbsp. brown sugar
1 tbsp. Italian seasoning
1 1/4 tsp. salt
1/4 tsp. pepper

Recipe Directions for Vegetarian Spaghetti Sauce

  1. Heat oil in skillet.

  2. Add onions and green pepper.

  3. Cook and stir until tender.

  4. Add the tomatoes, jalapenos, brown sugar, Italian seasoning, salt and pepper.

  5. Cook, stirring occasionally, for 12-15 minutes until sauce is thickened.

  6. Serve sauce with spaghetti, top with cheese if desired.
