Whole Wheat spaghetti with chunky veggie sauce

Recipe Ingredients for Vegetarian Spaghetti

1 tbsp extra virgin olive oil
3 cloves of garlic, diced
1 small white onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 tomatoe, diced
2 cups of brocolli
2 cups of mushrooms, sliced
2 cups of fresh baby spinach
7 cups of cooked whole wheat spaghetti
28 oz canned tomatoe sauce
14 1/2 oz canned diced tomatoes

Recipe Directions for Vegetarian Spaghetti

  1. Cook pasta according to directions on box. Keep warm.

  2. Heat oil in a 12 inch skillet, or larger.

  3. Add garlic, onion, red and green bell peppers, tomatoe, brocolli, mushrooms, and spinach. Saute until veggies are crisp tender.

  4. Add tomatoe sauce and diced tomatoes. Season with salt, pepper, and oregano.

  5. Simmer for 5 minutes.

  6. Add pasta and serve.
