Recipe Ingredients for Vegetarian Spaghetti/Lazagna Sauce

1/2 oz salted butter
2 cups water
2 cups sliced yellow squash
2 cups sliced zuccini
1 cup sliced red bell pepper
1 cup sliced yellow bell pepper
1 cup sliced orange bell pepper
1 cup sliced green bell pepper
2 cups diced yellow onion
2 cups sliced carrots
2 cups sliced celery
8 oz canned sliced mushrooms
36 oz canned stewed tomato
2 cans tomato paste
3 tbsp dried italian seasoning
1 tbsp garlic powder
3 cups dry toasted soybeans

Recipe Directions for Vegetarian Spaghetti/Lazagna Sauce

  1. sautee onions celery and carrots in butter over high heat until soft.

  2. add peppers and squash to pan until heated, then add seasonings.

  3. add mushrooms, and stewed tomatoes with thier juice.

  4. add tomato paste, soy, and water.

  5. allow to simmer 45min-1hr+.

  6. sauce will thicken as it simmers. Be sure to stir frequently as the soya granules will stick together at first.

  7. Much of the water content will simmer away, actual serving size is about 4-6oz.

  8. Add 2-4cups water or veg stock as desired for consistency.
