add pasta of your choice and you have a light and easy minestrone type of soup.

Recipe Ingredients for vegetarian soup

4 cups vegetable broth (low sodium)
4 cups water
2 cups diced tomatoes
1 cup celery
1 cup onion
1 cup bell pepper
4 cloves garlic
1 cup chickpeas (without salt)

Recipe Directions for vegetarian soup

  1. chop vegetables

  2. heat 1 tablespoon on olive oil in a stock pot

  3. add vegetables and saute until onions are translucent

  4. add water and broth and tomatoes

  5. simmer for 20 min.

  6. add chickpeas right before serving
